So, you’re wondering: what the heck is a Funwich ?! And why not just call it a Grilled Cheese …?!
Well, it just wouldn’t do it justice and in reality a Funwich is a cross between a grilled cheese and a panini. It is definitely not what you would expect to get when you order a grilled cheese.
A Funwich is a decadent sandwich grilled to a golden crisp perfection, (always on a cast iron griddle, never on a hot plate ) and filled with cheesy goodness and a delicious surprise.
My favorite one of all times is the Tomato, Basil and Fontina Funwich, the essence of summer enveloped in a gooey blanket of nutty Fontina cheese.
And then: Spinach and Artichokes mingled with creamy smoked mozzarella, will surely make you forget about the dip.
( Serves 1-2 )
- 2 slices sourdough loaf
- 1c fontina cheese -shredded
- 2 heirloom tomato slices
- 4 basil leaves- thinly sliced
- 1 1/2 tbs salted butter -softened
1. Butter one side of each slice of bread and top one slice with half of the cheese. Top with the tomato slices, basil and the rest of the cheese. Top with the other slice of bread.
2. Meanwhile heat up a cast iron grill skillet on medium low heat. Set the funwich in the hot skillet buttered side down, loosely cover with aluminum foil and let cook slowly on low flame for about 5 min or until golden brown. Flip the funwich with a spatula, loosely cover and cook for another 5 min or until golden and the cheese has melted.
Let cool for a couple of minutes then slice in half and serve.

- 1 c smoked mozzarella cheese -shredded
- 1 c fresh spinach
- 2 artichoke hearts sliced into 1/4” slices
- 1 garlic clove –crushed
- 1 tbs extra virgin olive oil
- 1 1/2 tbs salted butter-softened
- 1/4 tsp sea salt
1. Heat up your cast iron grill pan on medium low heat. In a small saute pan heat up the olive oil, add the garlic and cook until it starts to get some color. Add the spinach and saute until wilted. Season with the sea salt and drain in a small colander.
2. Butter one side of each slice of bread and top with half of the cheese. Top with the artichoke hearts and then the sauteed spinach followed by the rest of the cheese. Top with the other slice of bread.
3. Set the funwich in the grill pan -butter side down. Cover loosely with aluminium foil and grill on low flame for approx 5 min or until golden brown.
Flip the funwich, cover loosely with the foil and let cook another 5 min or until golden brown and the cheese has melted.
Allow to cool for a couple of minutes then slice and serve.
