Dragon Fruit Pitaya Smoothie Recipe

We’ve had some beautiful sunny days here in California, and I’m so excited to share this dragon fruit smoothie I’ve been enjoying for the past few days.Â
First of all, this is the creamiest smoothie in existence, thanks to the addition of the avocado and the magic of fat free a2 Milk® . I also added a couple of tablespoons of bee pollen and some chia seeds to bump up the nutritional value and protein content of my dragon fruit pitaya smoothie. Talk about a superstar nutritious breakfast to go, right ?!Â
I used raw organic honey to add a touch of sweetness, and a nice squeeze of lemon juice to balance it out, so there are absolutely zero yuckies allowed in here.Â
I already expressed my excitement for a2 Milk® in last month’s Chicken in Milk post, but boy am i glad that I can finally add milk to my smoothies again, the way nature intended.Â

I do suggest you enjoy this right away, or If you want to refrigerate it for later, the pitaya smoothie will start to thicken up due to the chia seeds. So you’ll have to add a splash of a2 Milk® right before serving to loosen it up and drink through a straw. Or just pour it into some popsicle molds and enjoy an amazing pitaya creamsicle later. But hey, also there’s nothing wrong with turning this gorgeous dragon fruit smoothie into a pudding. So grab a spoon and enjoy, maybe sprinkle some berries and nuts on top. Dragon Fruit Pitaya Smoothie Recipe
Ingredients
- 7 oz dragon fruit puree
- 1/2 c 2 Milk®
- 1 large avocado
- 2 tbsp raw honey
- 1 large lemon juiced
- 2 tbsp bee pollen
- 1 tsp vanilla extract
- 2 tsp chia seeds
Instructions
- Carefully cut up the avocado in half and discard the seed.
- In a small blender puree together the avocado with the dragon fruit puree and the a2 Milk® until smooth.
- Add the lemon juice, 1 1/2 tablespoons of the bee pollen, the chia seeds and buzz together just until incorporated.
- Taste and adjust seasonings with more honey or lemon juice to your liking.
- Divide the dragon fruit smoothie between 2 glasses and sprinkle with the remaining bee pollen. Enjoy chilled !
