Grilled Peach Balsamic Salmon Fillets Recipe

  • Preheat your broiler.
  • To make the balsamic reduction: In a small saucepan add the balsamic vinegar and honey and stir to combine well. Bring to a simmer and cook for about 10 minutes or so until reduced by half. The balsamic reduction should coat the back of a spoon nicely when ready. Remove from heat and set aside to cool.
  • Lightly oil a broiler proof dish and set the salmon fillets on it skin side down. Drizzle with a little olive oil and season all over the top with the sea salt, pepper flakes, garlic powder and black pepper. Broil for 3 to 5 minutes, depending on the thickness of your fillets.
  • Meanwhile heat up a cast iron grill pan on medium flame. Lightly oil it with a drop of olive oil. Grill the peach wedges for a couple of minutes on each side until nice grill marks form.
  • Serve the broiled salmon fillets over a bed of black lime rice, alongside the grilled peaches and drizzle with the balsamic reduction. Garnish with the basil leaves and blossoms.
