In a small food processor puree one cup of the peaches together with the agave until you have a smooth puree.
Divide the peach slices between 4 champagne glasses. Fill quarter of the way up with the peach puree.
Add 2 leaves of basil in each glass making sure to gently crush them in your hand first to release its fragrance.
Pour the Voveti Prosecco over the top and serve promptly garnished with extra basil leaves and blossoms if available. Enjoy !
