Summer Coleslaw Recipe

Ingredients

  • 1/2 small purple cabbage -Julienne style
  • 1 yellow bell pepper -Julienne style
  • 2 scallions -minced or thinly sliced
  • 1/4 c flat leaf parsley -roughly chopped
  • 1/4 c cilantro -roughly chopped

The Dressing:

  • 1/2 c greek yogurt -plain
  • 2 tbsp extra virgin olive oil
  • the juice from 1/2 lemon + more to taste
  • 2 tbsp raw honey
  • sea salt and black pepper to taste

Instructions

  • In a mixing bowl whisk together all the dressing ingredients and season to taste with sea salt and black pepper. Add the cabbage, bell pepper and scallions and toss to coat. Sprinkle with the herbs and gently fold them into the slaw. Serve over grilled meats, as a side dish or refrigerate until ready to use.
