Burrata Peach Salad Recipe

This Burrata Peach Salad is an explosion of fresh summer flavors and textures from sweet juicy peaches, creamy burrata, basil and a pomegranate balsamic dressing. You could go for grilled peaches and a handful of baby arugula to make a meal of things.Â

I actually really tried to style this peach salad recipe. I wanted to behave like a professional food blogger you know… Get all my ducks in a row..Â
I had it on a table outside my kitchen door, like a food magazine money shot kind of set up. But it really wasn’t happening for me, it’s just not me, I’m just not feeling that kind of style and I clearly couldn’t pull it off.Â
This is real life at the shack, just like it would happen if grandpa was here, so we’ll just roll with it this way.Â

This the season for perfect peaches!
There is a very limited peach season, so you can only enjoy this burrata salad at its peak around this time of year.
Same goes for the Peach Basil Salad with Blackberry Vinaigrette from last week.
Not like I can take much credit for it, I just threw the stuff together. Again, just perfect nature showing off like forget about it! Basically creamy burrata cheese, perfect yellow peaches, fresh basil from the garden and a handful of pomegranate seeds to balance out the sweetness and creaminess of the dish.Â
I drizzled it with some of the lemon honey dressing I had leftover from the Basil Pear salad, and just a kiss of pomegranate balsamic vinegar. You know, to bring the whole dish together.Â
You can also grill the peaches If you like, personally I just wanted to enjoy the perfection of a juicy summer peach. I find they are best grilled when they are a little firm, not quite really there yet.
Already dreaming of making this with figs as soon as they ripen.
Burrata Peach Salad Recipe
Ingredients
- 8 oz burrata cheese
- 2 yellow peaches
- 2 tbsp pomegranate seeds
- 1 tbsp pomegranate balsamic vinegar aged
- 2 tbsp lemon juice
- 3 tbsp extra virgin olive oil
- 1 tbsp wild honey
- 2 leaves sprigs basil only
- sea salt to taste
Instructions
- Pat dry the burrata cheese and gently tear it with your hands. Set it on a serving platter.
- Slice or dice the yellow peaches and place them around the burrata cheese.
- Sprinkle the entire dish with the pomegranate seeds.
- Whisk together the honey, lemon juice and olive oil. Season with a pinch of sea salt and adjust seasonings to your taste with more lemon juice or honey.
- Drizzle the burrata peach salad with the lemon honey dressing and pomegranate balsamic vinegar.
- Garnish with the fresh basil leaves and enjoy !
